I am an operations, strategy, and development executive focused on building, scaling, and optimizing complex consumer-facing platforms across diverse hospitality/foodservice spaces, food manufacturing/commissary, related technology, and adjacent growth industries. As Founder and Principal of Mile 91 LLC, I provide fractional executive leadership, project management, and operational strategy to brands navigating growth, complexity, and change. These client engagements reflect my ability to translate vision across industry spaces into executable systems while aligning teams, capital, and performance metrics. As VP of License Brands at Kitchen United MiX, I executed on a fractional role recovering a new division stalled launch and subsequent assessment into the platform’s viability. Leading both a team of directors and frontline operators, developing client management of 17 national and regional brand and the all-3rd party/DSP provider interoperability execution. As a project manager for the Wish You Were Here Group, I directed $3–$4M+ in capital projects across Little Ruby's Café and Dudley's in Manhattan and Brooklyn driving a 25%+ reduction in development costs by building aligned, accountable project teams and tight vendor partnerships. Within Bear State Kitchen, I led operational and SQF certification work on a $12M+ food manufacturing platform, placing operational rigor in the hands of people empowered to own it. As a Senior Domain Expert for Mercor Intelligence, I've contributed hospitality and foodservice knowledge to AI/LLM model development which reflects my ongoing belief in technology innovation and its transformative impact within the foodservice ecosystem.

Prior to Mile 91, I served as Vice President of Operations at Lemonade Restaurant Group later merging with Modern Market to become Modern Restaurant Concepts. I joined this talented executive team to scale the platform, ultimately from 12 to 28 locations through a $25M Butterfly Equity-backed expansion. This growth of roughly 54% fueled revenue from $20M to $50M+ and leading a 600+ person organization across California markets along a certified commissary facility in SF and a USDA certified food manufacturing site in LA. What made those outcomes possible wasn't just process discipline, it was a culture where people understood the value of signal centric communication and teamwork. In these spaces I held full P&L accountability, drove COGS, labor, and EBITDA controls, and helped guide the organization through an M&A integration with Modern Market.

Earlier in my career, I advanced from Executive Chef Partner to Managing Partner within Darden's Seasons 52 growing alongside the brand from 3 to 33+ locations nationally, consistently delivering $5M–$10M AUVs at 15–20%+ EBITDA margins. More than the results, that decade instilled in me how to develop leaders across distributed teams and geographies.
